Ingredients
1 (12 oz) pkg fresh blueberries
1 small jalapeño, seeded and finely chopped
1/4 cup granulated sugar
2 Tbs apple cider vinegar
1 (8 oz) goat cheese log
Directions
  1. In a saucepan, combine the blueberries, jalapeño, sugar and vinegar. Stir to combine. Bring to a boil. Let the mixture cook until the berries break down and release their juices. Cook for 7 to 10 minutes or until thickened. Remove from heat. Chill in the refrigerator for at least 2 hours or overnight.
  2. Lay a large piece of plastic wrap (about 8 x 10) on a work surface. Spread half of the blueberry mixture onto the plastic wrap in a rectangular shape. Place the goat cheese log on top of the berries. Spoon the remaining berry mixture on top of the cheese log.
  3. Wrap the plastic wrap sheet over the blueberry goat cheese log. Roll and wrap it until tightly sealed. Chill in the fridge for at least 2 hours. Serve the blueberry goat cheese log as part of a meat and cheese charcuterie board. Surround it with your favorite crackers, toast crisps or crostini.
